Happy November! It’s hard to believe that there are less than two months until the year is over. Like always, I wonder where time flies! So to start this new month with a zing, I’ll be sharing with you how to make these individual deep dish sugar cookies treat.

A fun take on the classic sugar cookie, this deep dish treat is, how do I say this?, SCRUMPTIOUS and oh so buttery!
If you’re looking for an easy and quick holiday cookie recipe then this one is for you.
When they are straight out of the oven, the cookie pies are extremely soft and they smell so good. Like Christmas or cozy cold winter days!
Add some buttercream icing or ice cream and this will become a perfect “recipe for one” dish.
The best part is that you can also make these cookies on a baking sheet or in mini ramekins!
This recipe is also a cookie exchange favorite, I’ve made this recipe in the past and they were gone before I knew it.
But before I share the recipe I just wanted to share a small life update so if you want the recipe as to how to make these delicious deep-dish sugar cookie pies then scroll down below, I won’t mind.
little life update
So how are you all doing? It’s been a while since I’ve done a little life update, so why not share one at the beginning of the month. As you all may know, I’m in university and like many students, after doing 1.5 years online I think I’m burned out. And it has affected all aspects of my life.
Between a huge amount of weekly readings, pre-recorded lectures, AND live lectures, there are days where I just feel like I can’t do this anymore (school that is).
While this semester’s grade may end up being worse than usual, I just hope that next semester will be in person because I just can’t do online any longer.
But on a happier note, within the last few months, I’ve done more traveling than usual like pre-pandemic times. Since I live in Montreal, there are lots of places less than a two hours drive and so with everything opening up again I’ve been going out and getting to know the world anew. And so that has helped a bit with the whole academic burnout situation.
So yeah that’s what’s been going on in my life lately.
Ok, now let’s get back to the recipe!
Deep Dish Sugar Cookies | easy and quick
materials needed:
While these deep dish cookies are fairly easy to make, the best part comes from the casserole!
To make these you’ll need either mini casseroles* or oven-safe mini pots*, preferably between 4 to 12-ounces works best.
I also tried it with some little white ramekins* and while smaller they also work out perfectly. Mmm, maybe they could also work on mini cast iron pans? I’ll have to try that out.
As you can see from the pictures I used some clear mini casseroles that I bought over the summer (both for $1!) and since then I have come to love their little size as they are perfect for individual meals or portions.
However, I only had two so after scouring the interwebs I learned that clear mini casseroles are no longer made?!? And that Lovenware (the brand of my casseroles) no longer exists and that they are only sold on Etsy or eBay so I went thrifting and to my surprise, I found two more 12oz mini casseroles!
But besides the mini casseroles or ramekins, no other special materials or equipment are needed to make these quick holiday cookies.
ingredients:
- 1 cup butter, room temperature
- 1 cup sugar
- 1 egg
- 2 1/2 cups of flour
- 1/2 teaspoon baking soda
- 1/2 teaspon baking powder
- pinch of salt
Makes 4-5 deep dish cookies
or
Two dozen (24) cookies
instructions:
Preheat the oven to 350°F (180°C) and grease the mini casseroles/ramekins or baking sheet. Place aside.
In a medium bowl, cream the softened butter and the sugar for about a minute until soft and fluffy. Add the egg and mix well.
In another mixing bowl, add the flour, baking soda, baking powder, and salt and mix. Add it to the butter bowl and mix thoroughly.
For the deep dish sugar cookies, add enough dough to the mini casseroles/ramekins until halfway full. Press with a spoon or lightly with fingers so it’s even-ish.
Place in oven, middle rack, and bake for about 20 minutes or until the top is lightly (emphasis on lightly) golden. If it overbakes the middle of the cookie will not be soft or easy to break with a spoon.
Once baked, let it cool for about 5 minutes or until it’s cool enough to handle. Add ice cream, sprinkles, or leave as is and now it’s ready to enjoy!
For two dozen sugar cookies, place rounded tablespoons of dough on the cookie sheet about 1.5 inches away.
(To give them texture, I like to lightly press them with a fork.)
Place in oven for 8-12 minutes or until golden, cool and then they are ready to eat.
And there you have it! How to make super easy deep dish sugar cookies that are perfect for the holidays, Christmas parties, or just when you want to eat some sugar!
notes:
One thing to note is that one deep dish sugar cookie equals about 4-6 cookies, so if trying to cut back on sugar maybe just eat a cookie or two rather than a whole mini casserole.
The cookie dough can be refrigerated for upwards of two weeks and can be frozen for up to a month. Just thaw to room temperature and bake.

One of the things I love about these sugar cookies is that they are super quick to make and are perfect for an impromptu cookie exchange, Christmas party, or any event where sweets are the perfect side dish!
