Freezing temperatures call for warm blankets, a good book, and tea. And what goes best with tea? Well, these raspberry oat scones!
Like most of Canada, this past week has been way below freezing with a lot of snow thankfully I’m doing school online (for now) and so I haven’t had to walk in windy, snowy, cold weather yet. But nevertheless, the cold is still felt indoors.
So one way to combat this (besides turning the heat on high, which it already is), is to put on warm fuzzy socks and make a good cup of chai.
Oh, and can’t forget some heartwarming raspberry oat scones!
Also, in a way fulfilling my winter bucket list even though it’s an indoor activity!
Today I’ll be sharing with you, how to make these delicious and light scones that I’ve been falling in love with for the last few weeks.
They are so easy to make and they go perfectly with any type of drink, cold or hot. Ideal for tea parties, after dessert, or even just for a good ol’ cosy breakfast!
These scones are deliciously easy and they turned out so wonderfully. Not too sweet nor too dry, and with just enough spice and sweetness that you’ll want to eat them all at once.
Heartwarming Raspberry Oat Scones
Materials needed or prep:
You can make the scones in two different ways:
a)In a greased 8-inch circular pan you pat down/press the dough and then place in the oven
b) with a rolling pin press dough on a flour cover surface until it is about 1/2 inch thick or 8 inches wide. Then transfer it to a greased baking sheet and bake as mentioned.
In both cases, parchment paper can also be used to minimize the risk of the scones sticking to the pan.
If you’re not keen on the triangle scone, you can also divide the dough into eight pieces and bake them in a muffin tin to get the classic round scone look.
ingredients
1 1/2 cups of flour
1 cup of quick oats
1/2 cup of sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup of melted butter
1 beaten egg
1/3 cup milk
2/3 cup of frozen or fresh raspberries
for topping:
melted butter
1 tablespoon sugar
1/4 teaspoon cinnamon
raspberries
instructions:
Preheat oven to 375F and prepare an 8inch circular pan or a cookie sheet.
In a medium-size bowl mix all the dry ingredients. In a smaller bowl, mix the butter, milk, and egg.
Slowly add the wet ingredients to the dry ingredients while also incorporating the raspberries into the dough.
Note: The dough may be hard to mix, so it might be best to use your hands!
Option 1. Place the dough into the greased circular pan and press down until the whole pan is covered. Cut into eights.
Option 2. On a floured surface roll out the doll into a 1/2 inch thick and about 8-9 inches wide. Cut into 8 wedges and place on a greased sheet.
Mix the 2 tablespoons of sugar and 1/2 teaspoon of cinnamon together in a small dish. Spread melted butter over the top, about 1 tablespoon is enough. Sprinkle over the sugar-cinnamon mix. If you’d like you can also place raspberries over it.
Place in the oven for 15-20 minutes or until it’s a tad golden.
Take them out of the oven and leave them to cool.
Place them on display in a cute dish and done!
The scones are ready to be eaten with some delicious tea or vanilla latte on a cold winter’s day.
One of the cool things about this recipe is that it is simple enough that you can replace or withhold the raspberries. Add apples, strawberries, or maybe some pumpkin spice for an autumnal recipe?
The possibilities are endless
A variation to try:
Apple spice- Add 1/3 cup of small diced apples and 1 tablespoon of cinnamon, and 1 teaspoon of nutmeg
